The traditional Majorquine cuisine is strongly influenced by the Mediterranean culture and geography. Hence, it is mainly characterised by variety.

The ensaimada and the sobrassada are the best known products abroad, but Majorquine cuisine offers also exquisite fish and seafood dishes, meat and delicious desserts. Wine, cheese, oil, sausages and vegetables; all are products from our island that are available at the markets; some display guarantee seals and all are characterised by an excellent quality.

SOBRASSADA FROM MALLORCA: Sausage with a protected geographic indication. It is made of selected minced pork meat and spiced with red pepper, salt and spices. Apart from the sobrassada, pork is used to make a variety of sausages, such as the llonganissa, the botifarró or the camaiot.

ENSAÏMADA FROM MALLORCA: Product with a protected geographic indication. Its singular spiral shape makes it different from any other cake. It is available in different sizes and is either plain or filled with pumpkin sweet (cabello de ángel), cream or vanilla pudding.

MALLORCA OIL: Extra virgin olive oil with denomination of origin made in Mallorca using Majorquine, arbequina and picual olives.

CHEESE: Amongst all cheese made on the Balearic Islands, the best known cheese is the one made in Menorca. The cheese with denomination of origin Maó-Menorca is made of cow's milk, curdled at low temperature, is salted by immersion and riped according to the island's tradition.

MAJORQUINE ALMOND: One of the most beautiful sights of the Majorcan landscape is the almond blossom. Almond trees produce one of the most typical fruits of our island, the almond, that is used to elaborate a variety of products and create some of the most delicious dishes within Majoran cuisine.

WINE AND LIQUOR: When talking about wine, two denominations must be highlighted: Binissalem and Pla i Llevant, that improve their produce on a daily basis. Liquor like Palo and hierbas (herbs) from Mallorca also have a geographic denomination. Palo has been made in Mallorca since the XIXth century and is made from soaking cinchona bark (quinine) and gentian. Hierbas, an aniseed drink, is made from soaking and distilling of aromatic plants from the island. You will find sweet, mixed and dry hierbas. 

MALLORCA IN THE KITCHEN:

Main dishes:
The Majorquine soup (sopas mallorquinas), made of brown bread and a great variety of vegetables, is the starter par excellence of our cuisine. A typical summer dish is tumbet, made of potatoes, eggplant, peppers and tomatoes. Eggplant is a very common ingredient in Majorcan cuisine and are you will find them stuffed either with meat or fish. Some of the most popular dishes are the frit mallorquí, made of fried lamb, potatoes and fennel, or the arròs brut, made of meat and vegetables. 

Fish and seafood dishes are known for their quality and freshness; We wish to highlight the cap roig (red scorpion fish), which, when cooked on the grill, becomes a real delight, able to satisfy even the finest most demanding palates. The anfós a la mallorquina, caldereta de llagosta (lobster stew), arròs de peix (fish rice) or stuffed squids are amazing dishes worth mentioning too. 

With regards to meat, the most typical dishes are those having suckling pig as their main ingredient. One of them is the roasted suckling pig or suckling pig from the oven. Traditional dishes are also llom amb col (pork loin with cabbage), the conill amb ceba (rabbit with onion) as well as the numerous lamb dishes.

Sweets: Mallorca's sweet dish par excellence is the ensaimada. However, other sweets such as the gató (almond cake) with ice-cream, the greixonera de brossat (a local cheese cake), the apricot cake, duquesses, crespells, rubiols or coques de patata (potato cake) are well known too.

Other: For the coffee break, we recommend a salted pastry cake (coca de verdura). It can be made of vegetables, trempó or red peppers. During the Holy Week of Easter cocarrois will be available, filled with vegetables, as well as the individual sized panades, stuffed with meat, fish or peas. However, nowadays you will be able to find these products in most bakeries throughout the whole year.
 
Last but not least, we wish to mention Pa amb oli at this point, brown bread with tomato and oil, accompanied by cheese, ham or Majorcan sausage and always served with Majorcan olives or sour marine fennel.
